If you know me then you’ll know I hate waste. What I love though, is coming up with creative ways to re-use and transform what I have.
I also like to keep it simple. You’ll never see my fridge full of produce and opened packages of food because that generates waste. While I eat a lot of produce, I buy in bulk (TO SAVE 💸💸) so that means I tend to have a lot of the same item on hand at any given time.
So don’t be discouraged if you’re trying to be a raw vegan but you’re coming across recipes with expensive ingredients like mulberries or nut butters. You don’t have to use those! Just use what you have. Keep it simple.
I say this all the time but I’ll say it again, raw food is the easiest thing I do. I follow 5 simple staples every single day with my food prep.
But I know that’s something that takes practice. It’s about creating rituals. And it just so happens I have tons of resources to help you do just that. Check out my video Simplify your Raw Vegan Diet as well as my ebook Fly, Butterfly, for a complete guide on a smooth transition to the LFRV lifestyle.
So to show you what I mean, I want to explain how I made a soup for dinner, and a salad dressing - which I stuck in the fridge for the next day - using the same ingredients, in one simple process.
I took ½ a cup of almonds (soaked for 7 hours and drained), the juice of 2 limes, 1 cup of celery (use the light part in the middle for creaminess), 2 pitted dates, some water, 1 tablespoon of dulse flakes and ½ a tablespoon of garlic and herb seasoning. I then blended it up smoothly. I took this mixture and poured half of it into a small bowl to use as my dressing.
Now the other half, leave in the blender. Add in 7 ounces of carrots. You could also use tomatoes. Or peppers, or peeled zucchini, or mushrooms for a creamy mushroom soup... you get what I’m saying? Blend that up, and you have your soup! Stick the dressing in the fridge for tomorrow and have your soup for dinner. That way you’ve got all your daily fat… for two days!
That’s what I call stretching the fat, and I do that quite a lot. I have tons of videos on my YouTube channel where I use the exact same process, so feel free to head over and watch some of those to get some ideas.
Remember, LFRV doesn’t have to be complicated, nor does it have to be expensive.
